Tropical Summer Rice Kale Salad

Ingredients

  • 1 package (7.2 oz.) RICE-A-RONIĀ® Rice Pilaf
  • 6 oz. kale, chopped into 1-inch pieces
  • 1 can (20 oz.) Pineapple Tidbits, drained
  • 4 oz. snap peas, sliced (1/2 cup)
  • 1 bunch radishes, halved and sliced (1/2 cup)
  • 1/2 cup poppyseed dressing

Preparation Steps

  1. Cook rice-pasta mixture according to package directions. Toss together warm rice-pasta mixture and kale in large bowl. Cool to room temperature.
  2. Stir in pineapple tidbits, peas and radishes. Toss with poppyseed dressing to evenly coat. Serve.
