Tropical Summer Rice Kale Salad
Recipe Yield: 3 to 4 Servings
- 1 package (7.2 oz.) RICE-A-RONI® Rice Pilaf
- 6 oz. kale, chopped into 1-inch pieces
- 1 can (20 oz.) DOLE® Pineapple Tidbits, drained
- 4 oz. snap peas, sliced (1/2 cup)
- 1 bunch radishes, halved and sliced (1/2 cup)
- 1/2 cup poppyseed dressing
- Cook rice-pasta mixture according to package directions. Toss together warm rice-pasta mixture and kale in large bowl. Cool to room temperature.
- Stir in pineapple tidbits, peas and radishes. Toss with poppyseed dressing to evenly coat. Serve.
